Ingredients
  

  • 3 Chicken breasts Add or reduce the chicken breasts based on the number of people you're serving.
  • 1 tsp Mirin
  • 1 & 1/2 tbsp Soy sauce
  • 1/2 tsp Tumeric
  • Black pepper Add it based on your personal preference
  • 10 pieces Baby potato ( or potato )
  • 1 Carrot
  • 2 Eggs
  • 2 Cucumbers
  • 1/2 Red onion
  • Salt Add it based on your personal taste
  • 3 cups Plain yogurt
  • 6 pieces Fresh red radish

Chicken Breast Preparation:
Marinate the Chicken:
  • If you’re planning to make chicken salad tomorrow, marinate the chicken overnight for the best flavor.
  • If you’re making it today, marinate for at least 2 hours before cooking.
  1. Make shallow cuts on the chicken breast, but do not chop it completely.
  1. Add turmeric, soy sauce, mirin, and black pepper, then massage the marinade into the chicken to ensure it absorbs the flavors.
  2. Place the marinated chicken in the fridge for either overnight or at least 2 hours.
  3. Preheat the oven to 365°F (185°C) and bake for 35 minutes with the lid on to keep the chicken breast juicy and tender.
Veggies Preparation:
  1. Steam the potatoes, carrots, and eggs (boiling the eggs is also an option).
  2. Boil the red radish separately. You can steam it with the potatoes and carrots, but boiling for 2 minutes helps maintain its crunchiness. Cooking the chicken and steaming (or boiling) the vegetables can be done simultaneously to save time.
Handling Red Onion and Cucumbers:
While waiting for the chicken and veggies, prepare the red onion and cucumbers.
  • If you prefer a crunchier salad, you can skip this step. However, if you want a creamier texture, follow this method:
    1. Place the sliced red onion and cucumbers in a bowl, sprinkle a little salt, and let them sit for 10 minutes.
    2. The salt will draw out excess water—squeeze and drain them to prevent your salad from becoming too watery.
A mix of freshly steamed and boiled veggies, marinated chicken, and hard-boiled eggs ready for assembly.
Final Steps:
  1. Once everything is ready, slice the chicken and return it to the oven pot to mix with the juices.
  2. Chop the boiled eggs.

    • Plant-based yogurt
    • Salt
    • Black pepper
