Three Cup Chicken is one of my favorite dishes to make because it’s simple and delicious. The flavors unfold from spicy to savory to sweet, without ever feeling too salty. As the juices cook down, the addition of basil creates a perfect balance of flavors.

  • 1 Fry pan
  • 1 Cooking tongs

Ingredients
  

  • 2 lb Small chicken legs (boneless chicken can also be used)
  • 38 g Ginger
  • 10 g Crystal sugar (you can also use organic sugar from Trader Joe's or other grocery stores)
  • 5 cloves Garlics
  • 1 Tiger-skin pepper (if you don't want chili pepper, you can use only tiger-skin pepper)
  • 1 Chili pepper (if you don't want tiger-skin pepper, you can use only chili pepper)
  • Basil (add according to your taste)
  • 45 ml Soy sauce
  • 45 ml Rice wine
  • 45 ml Sesame oil

Notes

1. Fry the chicken: Heat the pan over medium heat and add the chicken. Fry until the surface turns golden, then remove it from the pan.
    • With skin: Add a little oil or none at all, depending on the amount of skin.
    • Without skin: Add ½ teaspoon of oil.

2. Add the garlic and ginger, and fry until fragrant.
3. Add sesame oil and fry with the garlic and ginger for 1 minute.

4. Return the fried chicken to the pan and fry for 3 minutes.
5. Add the tiger-skin pepper and chili pepper, and fry for 4 minutes.

6. Add the rice wine and soy sauce, and stir for 6 minutes, stirring occasionally as the sauce thickens.
7. Cover the pan with a lid and simmer over medium-low heat for 5 minutes, stirring occasionally as the sauce thickens.
8. Check if the chicken is fully cooked. If not, simmer for another 5 minutes. Cooking time may vary slightly depending on whether the chicken has bones.
9. Add basil and stir for 3 minutes over medium-low heat.
